BBQ Pork medallions
Background
Pork medallions are tender and delicate, so ideal for quick grilling or barbecuing. The following BBQ Pork medallions are marinated in a garlic-mustard sauce, making them really delicious. Serve with a potato salad and coleslaw.
Ingredients
- 8 pork medallions
- 1 large garlic clove, minced
- 1 tsp English mustard
- 1 tsp Dijon/Grainy mustard
- 1 tsp olive oil
Instructions
- Mix the mustards with the oil and garlic. Brush the medallions on both sides, season with pepper.
- Marinate up to 2 hours (minimum 15 minutes).
- Barbecue or grill the medallions for a couple of minutes on each sides until lightly charred.
- Serve warm.
