Beef and mushroom burger

Background
For a laid-back family weekend meal or get-together, homemade burgers are always a good choice. For this beef and mushroom burger the mince mixture can be prepared in advance - the cooking then only takes 10 minutes (which can be done on the bbq, grill, griddle or hob). It’s up to you whether you use egg or breadcrumbs as the binding agent - I made mine with gluten-free breadcrumbs, so the burgers were dairy-free, gluten-free, nut-free and egg-free (ticking most allergies). Half a kilo of beef mince is enough for 4 large or 6 smallish burgers so for a party you’ll need to double the ingredients. Serve the burgers as per usual - in a bun (can again be gluten etc. free) or with chips/salad and condiments of your choice.
Ingredients
- 1 small onion
- 1 clove of garlic
- 2 tsp dried oregano or marjoram
- 150g mushrooms
- 500g lean beef mince
- 4 Tbsp breadcrumbs or 1 egg
- 1 Tbsp mushroom ketchup (or 1 tsp Worcestershire sauce)
- 1 Tbsp Dijon mustard
- salt and freshly ground black pepper
Instructions
- Finely chop the onion, garlic and mushroom.
- Heat a spoonful of oil in a pan and gently sauté the onion for 5 minutes. Add the mushroom, garlic and herbs, then cook for 8-10 minutes, under cover, until the mushroom has released all its liquid and browned. Turn up the heat and let the liquid evaporate. Let it cool. Chill this mixture until you’re ready to cook the patties.
- Add the mushroom mixture and the rest of the ingredients to the mince. Season with salt and pepper to your liking, then combine well.
- Divide the mixture into 4-6 equal portions, then form balls and flatten them between your palms to create patties.
- Using a large frying pan or cast iron griddle, cook the burgers for 10 minutes or so, turning once, until evenly cooked. Alternatively, brush them with oil and grill or barbecue them over medium heat.
- While the burgers are cooking – prepare the buns, salad and condiments of your choice. ( You might want to toast the buns).
- Serve the burgers immediately.
