Curd cheese spread with paprika and garlic

Background
Curd cheese is staple food in Middle and Eastern Europe. This curd cheese spread with paprika and garlic is a popular Hungarian sandwich spread. You can get curd cheese in most supermarkets at the Polish section or at delis. The traditional version is made with full fat curd cheese, butter and sour cream (so it’s like a textured paté), but it’s more healthy without butter and using half-fat curd cheese and Greek yogurt.
Ingredients
- 250g curd cheese (half-fat)
- 50g sour cream or Greek yoghurt, approx.
- 1 small red onion
- 2 tsp paprika
- 1 small garlic clove, minced
- 50g butter, room temperature (optional)
- ½ tsp ground caraway seeds
Instructions
- Grate or finely chop the onion.
- Put the curd cheese in a mixing bowl.
- Add the yoghurt and mash the curd cheese with a fork until you get a textured spread. Add the butter, if used. Add more yoghurt if it’s not creamy enough.
- Add the paprika, garlic, ground caraway seeds, salt & pepper, then combine well.
- Taste and adjust the seasoning. You can add a pinch of cayenne if liked.
- Rest for at least 30 minutes in the fridge before serving.
