Background
This beet and carrot slaw is super-easy to whip up - it takes just five minutes! It's not only healthy but very versatile too - the perfect salad for barbecued fish or meat; a zingy filling in burgers, kebabs or sandwiches; and a lovely condiment for picnic trips and so on.
Ingredients
- 1 large carrot
- 100g beetroot
- 1 Tbsp olive oil
- ½ Tbsp balsamic vinegar
- 1 Tbsp sunflower seeds
- 1-2 pinches of ground cumin
Instructions
- Peel the carrots and beets then shred them thinly.
- Whisk the oil with the vinegar and cumin.
- Mix the shredded veggies with the vinaigrette. Season to taste.
- Sprinkle with sunflower seeds and serve.
Tips
