Background

This beet and carrot slaw is super-easy to whip up - it takes just five minutes! It's not only healthy but very versatile too - the perfect salad for barbecued fish or meat; a zingy filling in burgers, kebabs or sandwiches; and a lovely condiment for picnic trips and so on.

Ingredients

1 large carrot
100g beetroot
1 Tbsp olive oil
½ Tbsp balsamic vinegar
1 Tbsp sunflower seeds
1-2 pinches of ground cumin

Instructions

Peel the carrots and beets then shred them thinly.
Whisk the oil with the vinegar and cumin.
Mix the shredded veggies with the vinaigrette. Season to taste.
Sprinkle with sunflower seeds and serve.

Tips

Just scrub the carrots, rather than peel them, if they're organic.
