Black bean and courgette patties
Background
These black bean and courgette patties are perfect for a spicy vegan or vegetarian burger, just add the usual condiments. I prefer wrapping them in tortilla with salsa and chilli sauce. Perfect for laid-back parties, summer barbecues etc. If you make the patties small, they make nice party nibbles or appetizers too!
Ingredients
- 1 red onion, grated
- 2 clove2 of garlic, minced
- 1 chilli, finely chopped
- 1 tsp cumin
- 1 tin black beans, drained
- 1 small courgette, roughly grated
- 2 tsp chia seeds or ground flaxseed
- 1 lemon or lime, zested
Instructions
- Mash the beans with a fork in a mixing bowl. Add the other ingredients, season and combine well.
- Divide the mixture into 4 or 6 equal portions and form patties. Put these on a plate, cover and chill until youβre ready to cook them.
- Heat a grill, griddle pan or frying pan.
- Spray the patties with oil then cook them until golden.
- Serve warm.
