Black bean, carrot and beet patties

Background
These spiced black bean, carrot and beet patties can be a served in a vegan or vegetarian burger with condiments, toppings of your choice. Alternatively, serve them with a salad for a low-carb or gluten-free meal.
Ingredients
- 1 cup cooked or tinned black beans
- 1 carrot
- 1 small beetroot
- 1 celery
- 1 shallot
- 1 clove of garlic
- 2 Tbsp chopped parsley
- Β½ tsp cumin powder
- Β½ tsp chilli flakes
- Salt & pepper
- To cook: chickpea flour, olive oil
Instructions
- Put the beans in a mixing bowl.
- Finely grate the beetroot, carrot, celery, shallot and garlic. Add these to the beans.
- Add the chopped parsley, cumin and chilli flakes, then season with salt and pepper. Mix well. If the mixture is too sticky or doesnβt bind well, add some chickpea flour.
- Make a few patties (about 4-6) using your hands.
- Heat some oil in a frying pan, then lightly coat the patties in chickpea flour and fry them for about 3 minutes on both sides.
- Serve warm.
