Cabbage and corn fritters

Background
Cabbage and corn fritters are deep fried fritters - and they're really delicious. These make a great combination with hot tea on cold evenings. The recipe can be made instantly and it does not take much time to prepare. The fritters turn out to be very crunchy and remain so for about 2 hours.
Ingredients
- 2 cups shredded cabbage
- 1 cup corn
- 1 Tbsp rice flour
- 1 Tbsp chick pea flour
- 2 green chillies chopped
- 1 tsp chopped ginger
- 1 Tbsp chopped coriander leaves
- 1 Tbsp chopped curry leaves
- 1 tsp cumin seeds
- Salt to taste
- Oil for deep frying
Instructions
- Make a coarse paste of corn in a blender.
- In a bowl add the shredded cabbage, rice flour, chickpea flour, cumin seeds and corn paste.
- Add chopped green chillies, chopped ginger, coriander leaves, chopped curry leaves and salt.
- Add little water and mix well. Never add too much of water, otherwise it will spoil the texture of the fritters.
- Heat oil in a deep bottomed pan. Drop small portions of the batter one by one in the heated oil.
- Keep stirring and fry until golden brown. Drain on a kitchen tissue.
- Repeat the process till the batter is finished. Serve hot with coffee or tea.
Tips
