Cajun Chorizo chilli
Background
If you like chilli con carne - do try this simple, mild, Cajun-spiced chorizo version. It’s easy to make, yummy and very hearty. Cajun Chorizo chilli is ideal for a busy midweek or lazy weekend supper, or for parties. If you want it to give it a real kick, use spicy chorizo and/or add some chilli powder/cayenne pepper to the cooking. Serve it with rice and/or flatbread and a fresh salsa on the side.
Ingredients
- 1 Tbsp vegetable oil
- 1 onion
- 1 large clove of garlic
- 250g chorizo cooking sausage
- 1 tsp Cajun spice mixture
- 1 Tbsp tomato purée
- 1 can tomato (chopped)
- 1 can kidney beans
- 1 can chickpeas
- About 100g grated cheese or sour crème (optional)
- 1 handful of coriander leaves, chopped
- 1 handful of coriander leaves, chopped
Instructions
- Chop the onion, garlic and slice the chorizo.
- Heat the oil in a pan, and cook these for a few minutes, until the chorizo release its fat and a the onion has softened.
- Add the cajun spice mixture, tomato purée and tinned tomato. Cook for 10 minutes, then add the drained beans and chickpeas. Cook for another 5 minutes. Taste and season with salt and pepper to your liking.
- Serve with coriander and grated cheese scattered on top.
