Cauliflower, lentil and spinach curry
Background
This vegan cauliflower, lentil and spinach curry is made in two phases. The first stage is cooking the tomato & pepper sauce, which is made in the oven, then can be chilled or frozen until youβre ready to start the second phase. So this dish is ideal for meals on busy weekdays as you could precook the sauce. Serve it with rice or naan bread and a crispy salad on the side.
Ingredients
- 1 head cauliflower
- 1 Tbsp tomato paste
- 1 tsp ground coriander
- 1 tsp ground cumin
- Β½ tsp chilli or paprika
- Β½ tsp turmeric powder
- Β½ tsp cinnamon powder
- Β½ tsp freshly ground peppercorn
- 1 tsp salt
- 2 handful of baby spinach
- 1 tin brown lentils
- For the tomato sauce:
- 1 red onion
- 4 cloves of garlic
- 1 red pepper
- 6 ripe tomatoes
- 2 Tbsp olive oil
- Salt &pepper
Instructions
- Preheat the oven to 180Β°C.
- First make the tomato sauce. Cut the onion into wedges. Halve the tomatoes and cut the red pepper into chunks. Put them in a baking tray and tuck the garlic cloves between the veggies.
- Season with salt and pepper, then drizzle with oil.
- Bake in the oven for 25-30 minutes, until the vegetables are tender and lightly browned.
- Take the tray out of the oven and let the vegetables cool, then remove their skins.
- Put the flesh of the veggies in a liquidiser together with cooking juices. Whiz until you get a sauce.
- You can chill or freeze this sauce for later use, or continue with the recipe immediately.
- Tear the cauliflower into small florets.
- Heat some oil in a heavy based saucepan and gently sautΓ© the cauliflower for 5 minutes. Add the tomato purΓ©e and the spices. Stir for one minute, then add the tomato sauce and a small glass of water. Season to taste.
- Bring to the boil and gently simmer for 15 minutes.
- Add the lentils and spinach and cook for another 5 minutes.
- Serve warm.
