Background

This is a super-easy kebab for a barbecue or weekend brunch. You can prepare it in advance and leave it to marinate overnight or for a couple of hours - but if you don't have time you can grill it right after glazing the meat.

Ingredients

500g skinned chicken breast
3 Tbsp tomato purée
2 Tbsp honey
2 Tbsp Worcestershire sauce
1 Tbsp chopped rosemary
250g cherry tomatoes
Rosemary leaves to garnish
salt and pepper

Instructions

Cut the chicken breast into bite-size cubes.
Mix the tomato purée, honey, Worcestershire sauce and rosemary, then add the chicken pieces. Mix thoroughly.
Marinate in the refrigerator for 1-2 hours.
Meanwhile: If you're using wooden skewers, soak them in water for half an hour to prevent burning.
Prepare your BBQ or warm & oil your grill/griddle pan.
Season, then pull the chicken pieces and tomatoes alternately onto the skewers.
Brush the remaining sauce on the skewers, season, then grill or barbecue for about 10-15 minutes. Turn the skewers around a few times.
Serve it with salad or grilled vegetables - perhaps in pita.
