Chinese spiced roasted chicken

Background
If you want a nice roast during the Chines New Year festivities or just to want to spice up your roast dinner try this tasty Chinese spiced roasted chicken with baked pak choi. Itβs easy to bake and perfect for laid-back weekend meals. Serve it with Jasmine rice or Chinese egg-fried rice and stir-fried veggies.
Ingredients
- For the roast:
- 1 medium chicken
- 1 Tbsp vegetable oil
- 1 tsp Chinese five-spice powder
- 1 lemon or 2 limes
- 1 garlic bulb
- 1 inch piece of ginger
- 1 bunch spring onion
- 2 pak choi
- For the glaze:
- 1 Tbsp dark soy sauce
- 1 Tbsp rice vinegar
- 1 garlic clove, minced
- 1 tsp sesame oil
- 1 Tbsp honey
- Β½ tsp chilli sauce (optional)
Instructions
- Preheat the oven to 200°C.
- Cut the garlic bulb & lemon in half.
- Cut the green part off the spring onion. Put the green parts, half lemon, half garlic bulb and ginger into the cavity of the chicken.
- Mix the oil with the spices and the juice of the other half of the lemon.. Add some salt & pepper, then rub the chicken with this mixture.
- Put the chicken in a baking tray and put the garlic bulb & lemon halves next to it. Pour over any remaining spiced oil.
- Put the chicken in the oven, and reduce the temperate to 180°C.
- Cook for an hour or so, then tilt the chicken to release the cooking juices into the tray.
- Meanwhile, mix the glaze in a small bowl.
- Cut the pack choi in half and put in the tray together with the spring onions. Baste them with the cooking juices.
- Brush the chicken with the glaze mixture, using a silicon brush.
- Cover the tin with foil and cook for 20-25 minutes. Remove the foil and cook for another 10 minutes or so. Check whether the chicken has cooked through by inserting a skewer into the legs - if clear juice is coming out itβs done; if the juice is still pink, roast for another 10-15 minutes (covered with foil).
- Remove the chicken and rest on a plate for 10 minutes, before carving.
- Serve with the roasted pak choi & spring onions, and sides dishes of your choice. Pour over the cooking jus.
