Bacon and sheep cheese omelette

Background
Bacon goes really well with sour tasting, brined cheeses such as feta or sheep cheese, so no wonder this simple bacon and sheep cheese omelette is absolutely delicious. I added some nutty watercress, but wild rocket or spinach leaves would work too. Serve it with a slice of sourdough!
Ingredients
- 2 rashes of bacon
- 4 eggs
- 50g soft sheep cheese
- 1 handful watercress
Instructions
- Whisk the eggs in a small bowl.
- Cut the bacon into small pieces.
- Heat a drop of oil in a frying pan and cook the bacon pieces until crispy, then transfer them to a plate.
- Add the beaten eggs to the pan, letting the mixture spread out evenly.
- Crumble the cheese over it, then add the bacon pieces.
- Cook for a couple of minutes, until the egg has set.
- Transfer to a plate, then add the watercress, fold and cut it half.
- Serve warm.
