Background

Bacon goes really well with sour tasting, brined cheeses such as feta or sheep cheese, so no wonder this simple bacon and sheep cheese omelette is absolutely delicious. I added some nutty watercress, but wild rocket or spinach leaves would work too. Serve it with a slice of sourdough!

Ingredients

2 rashes of bacon
4 eggs
50g soft sheep cheese
1 handful watercress

Instructions

Whisk the eggs in a small bowl.
Cut the bacon into small pieces.
Heat a drop of oil in a frying pan and cook the bacon pieces until crispy, then transfer them to a plate.
Add the beaten eggs to the pan, letting the mixture spread out evenly.
Crumble the cheese over it, then add the bacon pieces.
Cook for a couple of minutes, until the egg has set.
Transfer to a plate, then add the watercress, fold and cut it half.
Serve warm.
