Ingredients
- 2 large carrots
- 2 large bananas
- 1 large egg (or flax egg for vegan option)
- 1 Tbsp vegetable oil
- 2 Tbsp honey (or maple syrup for vegan version)
- 2 tsp cinnamon (Ceylon)
- ½ cup cocoa powder
- ½ cup oats
- 1 cup wholemeal flour
- 1 tsp baking powder
- ½ cup chopped dates
- ½ cup sultanas
- Optional for topping:
- Icing sugar for dusting
- Cream cheese glaze (cream cheese mixed with a little honey)
Instructions
- Grate the carrots and set aside.
- Preheat your oven to 180°C (350°F) and line a loaf tin with parchment paper or use a silicone mould.
- In a large bowl, mash the bananas with a fork. Add the cinnamon, oil, cocoa powder, honey and egg. Stir until smooth and well combined.
- In another bowl, mix together the oats, baking powder and flour.
- Add the dry mixture to the banana mixture and stir until fully combined.
- Fold in the grated carrots, sultanas and chopped dates.
- Tip the mixture into he prepared loaf tin.
- Bake for about 60 minutes, or until a skewer inserted into the centre comes out clean.
- Let it cool in the tin for 10 minutes, then transfer to a wire rack to cool completely.
- Dust with icing sugar or spread cream cheese glaze on top.
