Background
I love these coconut waffles because they are not too sweet. If you want a sweeter version use sweetened desiccated coconut or serve them with maple syrup or coconut yogurt for breakfast or dessert. They make lovely snacks during the day too!
Ingredients
- 1 cup flour
- 2 eggs
- 1 tsp baking powder
- 1 cup coconut milk (not tinned)
- 1 tsp coconut oil
- ½ cup unsweetened desiccated coconut
Instructions
- Put the flour, eggs, coconut milk, baking powder and oil in a blender and whiz until you get a thick but pourable batter. Add more milk if it’s too thick.
- Mix in the desiccated coconut, then rest the batter for 10 minutes.
- Heat the waffle maker. When it’s hot, add a ladleful of the batter and seal. Cook the waffle until golden and crispy, following the machine’s instruction. It should take about 3-5 minutes, depending on your waffle maker.
- Transfer the waffle to a plate, then make more waffles from the batter (you should get another 2 or 3 depending on the size of your waffle maker).
- Serve the waffles with desiccated coconut and a drizzle of lime juice.
