Couscous salad with dried fruits

Background
This couscous salad with dried fruits and almond can be served warm as a side dish with grilled lamb or a tagine. Alternatively serve it cold at parties, barbecues, picnics or part of a buffet menu.
Ingredients
- 1 cup vegetable stock
- 2 Tbsp soft butter or dairy-free margarine
- ½ cup mixed dried fruits, chopped
- 1 cup dry couscous (small grain)
- 1 tsp ground cinnamon
- 3 Tbsp almond flakes
Instructions
- Bring the stock to the boil. Add the dried fruits and the butter. Turn the heat off and add the couscous. Cover the pan with a lid and let it rest for 5-8 minutes.
- In the meantime dry-fry the almonds until golden brown.
- Loosen the couscous with a fork, add the cinnamon and almonds.
- Serve it warm or at room temperature.
