Cranberry Sauce with port and orange
Background
You can't have roast turkey without cranberry sauce! The basic recipe is incredibly easy: just cook 300g of fresh cranberries, 100 ml fruit juice, 150g sugar and some spices (such cinnamon, star anise or cloves) and citrus zest until you get a thick, sticky jam. This Cranberry Sauce with port and orange is a rather boozy version that goes superbly with roast goose or duck!
Ingredients
- 300g fresh cranberries
- 100 ml port (red)
- 1 small piece of cinnamon
- 1 orange
- 150g sugar (approx.)
- 1 Tbsp orange liqueur (Grand Marnier or similar)
Instructions
- Grate the orange zest and squeeze out its juice.
- Put the cranberries, cinnamon, port, orange zest & juice into a pan. Bring to the boil, then simmer under cover, until the cranberries start to pop and soften. Then add the liqueur and enough sugar to your taste.
- Turn off the heat, remove the cinnamon, and let it rest under cover to thicken.
