Background
This crayfish pate takes only 5 minutes to make! It creates a wonderful and elegant topping on canapés and nibbles or can be a lovely sandwich filler. Perfect for parties and picnics - or as an appetizer at a dinner party.
Ingredients
- 100g crayfish
- 1 tsp mayonnaise
- 2 tsp Greek yoghurt
- 1 Tbsp chopped dill or chives
- zest and juice of 1 lime or ½ a lemon
- ¼ tsp cayenne pepper or ½ red chilli, chopped
Instructions
- Chop the crayfish into tiny pieces.
- In a bowl combine these with the mayonnaise and yoghurt. Add the herbs, spice and the lime zest.
- Squeeze on a little lime juice. Season with salt and pepper and taste it - adjust the seasoning and add more lime juice or mayo if needed. The spread should be neither too runny nor too smooth!
