Background
This cucumber and coriander relish is a lovely little condiment for sandwiches, burgers, barbecued food and so on, or can be used on nibbles and appetizers. It keeps well in the fridge, particularly if stored in a sterilized, sealed jar.
Ingredients
- 1 cucumber
- 4 Tbsp white wine vinegar
- 1 Tbsp granulated sugar (preferably unrefined)
- ½ tsp salt
- 1 tsp coriander seeds
- 30g fresh coriander
Instructions
- Cut the ends of the cucumber, then cut in half along its length. Using a spoon scrape out the seeds.
- Chop the cucumber into 1 cm cubes & put them into a bowl.
- Mix the salt, vinegar, sugar and coriander seeds. Season to taste.
- Pour the dressing over the cucumber.
- Chop the coriander and mix in with the cucumber.
- If you can, chill for an hour or so before serving.
