Curd cheese pasta

Background
Curd cheese is very popular in most Eastern European countries. In the West you can buy it it in Polish supermarkets, although in some dishes it can be substituted with cottage cheese (which is more creamy). Curd cheese pasta (Túrós tészta or Túrós csusza) is a very popular dish in Hungary, particularly loved by children. We normally eat it after a hearty soup or stew, such as the Fisherman's soup, goulash soup or bean stew. It can be served sweet or savoury. I do the sweet version with honey or agave rather than sugar, to make it more healthy.
Ingredients
- 100g pasta
- 2-3 Tbsp curd cheese
- 2 Tbsp sour cream (or Greek yogurt)
- 1 Tbsp honey
- ½ tsp cinnamon powder
Instructions
- Cook the pasta in slightly salty water according to the instructions on the packaging.
- Using a fork, mix the curd cheese with the sour cream, honey and cinnamon.
- Drain the pasta, then transfer it back into the pan. Add the cheese mixture and toss well.
- Serve warm, with some icing sugar dusted on top.
- Savoury version: omit the honey and cinnamon. Whilst the pasta is cooking, fry a handful of lardons per person in a pan until crispy.
- Mix the sour cream and curd cheese, then toss with the drained pasta. Serve with the crispy lardons scattered on the top and with plenty of freshly ground pepper.
