Dairy-free chocolate waffles
Background
Waffles bought in the stores always have milk in them so if you have dairy issues it’s worth investing in a waffle maker. Home-made waffles are more healthy anyway, and really easy to make. These Dairy-free chocolate waffles are made with plant-based milk (I like using oat or almond milk, but coconut, soy and hazelnut milk would work too). Serve the waffles with your favourite sauce or fruits!
Ingredients
- 150g self-raising flour
- 1 tsp baking powder
- ½ tsp bicarbonate of soda
- 2 -3 Tbsp muscovado sugar
- 2 medium eggs
- 2 Tbsp cocoa powder
- 250 ml oat or almond milk
- 2 Tbsp vegetable oil
Instructions
- Mix the dry ingredients in a large bowl. Beat in the eggs, then then add the milk gradually, whisking until you get a thick, smooth batter. Add the oil and stir until combined.
- Heat the waffle machine. Once it’s hot, spoon in the batter and seal. Follow the machine instructions to cook the waffles, one by one. You should get about 4 waffles, depending on your machine.
- Serve, dusted with powder sugar, chocolate sauce, compote etc (see above).
