Easy curried baked beans

Background
For a quick lunch I regularly make curried baked beans which I serve with bacon and/or on a piece of toast. When I have time I mix my own curry powder (which is ground coriander, cumin, paprika, turmeric and ginger), then fry an onion and garlic, add the spices, stir for a minute then add the baked beans to warm through. Sometimes I only have 5 minutes to cook - so this is the recipe I use to make my super easy curried baked beans.
Ingredients
- 1 can baked beans ( reduced salt and sugar)
- 1 Tbsp curry powder
- ½ cup raisins
- Grated cheddar ( optional)
- Ground pepper
Instructions
- Make some toasts in your toaster (optional).
- Meanwhile pour the baked beans into a saucepan, add the curry powder and raisins. Heat it through, stirring for about 5 minutes, until it starts bubbling.
- Serve on toast or a side dish with plenty of ground pepper and a pinch of dried chilli flakes, if you like.
- You can scatter grated cheese on top or some chopped coriander leaves.
