Elderflower waffles
Background
When the elderflower trees blossom during late Spring I always make some cordial or elderflower syrup, which I use for cakes, cocktails and marinades during the Summer. I made these Elderflower waffles using my homemade syrup, so the batter didn’t need added sugar. You can use cordial too, but it’s thinner and less sweet so you’ll need to adjust the milk and sugar content. This a dairy-free and gluten-free version, but you can use normal milk and wheat flour if preferred.
Ingredients
- 1½ cup of flour which can be gluten-free
- 2 eggs
- 1 cup of almond milk Approx.
- 3 Tbsp elderflower syrup
- ½ tsp vanilla paste
- Drop of oil
- Oil spray to cook
Instructions
- Using an electric or hand-held mixer, whisk the ingredients together in a large bowl then rest for 10 minutes.
- Heat your waffle maker. Once it’s hot, spoon in the batter, spreading it out evenly, then seal. Following the machine’s instructions cook it for 3-5 minutes, depending on your waffle maker. The waffle should be golden and crispy on the outside.
- Transfer the waffle to a plate, then make about 3 more waffles from the remaining batter (this depends on the size of your waffle maker).
- Serve them with elderflower syrup drizzled on top.
