Background
When I have leftover falafels, home-made or shop-bought, I make a quick & easy salad with them for lunch. This falafel salad with tahini sauce is on the table within 10 minutes - or you can take it with you in your lunch box to work, on trips and picnics. To make your own tahini sauce is super easy too -Β just follow this recipe. Serve it with flatbread.
Ingredients
- 6 ready-made falafels
- 2 handful of mixed salad leaves
- 1 handful black olives, drained
- Β½ cup chopped cucumber
- 1 handful cherry tomatoes on the vine
- Β½ red onion, sliced
- Β½ red pepper sliced (or roasted pepper from a jar)
- 4 Tbsp hummus
- 4 Tbsp tahini sauce
- 1 Tbsp olive oil
- Juice of Β½ lemon
Instructions
- Put a big dollop of hummus in the middle of a large plate. Scatter the salad leaves around the hummus, then arrange the other veggies on top.
- Place the falafels into the hummus, then drizzle the salad with olive oil and lemon juice.
- Drizzle the tahini sauce over everything, just before serving.
