Instructions

1. Cut the fennel in half, then slice thinly.
2. Peel the carrots, then coarsely grate.
3. Thinly slice the celery and its leaves.
4. Core & halve the apple, then cut into very thin wedges.
5. In a serving bowl mix the horseradish with the yoghurt, then stir in the chopped vegetables & apple.
6. Season to taste.
7. Rest for about 15 minutes before serving for the flavours to combine.
8. Garnish with some fresh coriander leaves.
