Background

This fennel and apple slaw is particularly suitable for fish dishes such as fishcakes, fish-burgers or barbecued & grilled fish. It's ready in ten minutes! And it's very healthy too.

Ingredients

150g Greek yoghurt
3 tsp horseradish (creamy)
1 green apple
1 medium carrot
1 stick celery
1 medium fennel
2 Tbsp chopped coriander leaves

Instructions

Cut the fennel in half, then slice thinly.
Peel the carrots, then coarsely grate.
Thinly slice the celery and its leaves.
Core & halve the apple, then cut into very thin wedges.
In a serving bowl mix the horseradish with the yoghurt, then stir in the chopped vegetables & apple.
Season to taste.
Rest for about 15 minutes before serving for the flavours to combine.
Garnish with some fresh coriander leaves.
