Background
This fennel and apple slaw is particularly suitable for fish dishes such as fishcakes, fish-burgers or barbecued & grilled fish. It's ready in ten minutes! And it's very healthy too.
Ingredients
- 150g Greek yoghurt
- 3 tsp horseradish (creamy)
- 1 green apple
- 1 medium carrot
- 1 stick celery
- 1 medium fennel
- 2 Tbsp chopped coriander leaves
Instructions
- Cut the fennel in half, then slice thinly.
- Peel the carrots, then coarsely grate.
- Thinly slice the celery and its leaves.
- Core & halve the apple, then cut into very thin wedges.
- In a serving bowl mix the horseradish with the yoghurt, then stir in the chopped vegetables & apple.
- Season to taste.
- Rest for about 15 minutes before serving for the flavours to combine.
- Garnish with some fresh coriander leaves.
