Gluten-free Vegan Pizza
Background
This vegan, gluten-free pizza is ideal for those who are on dairy-free, gluten-free or/and vegan diets. The dough requires a little bit of skill and the baking is quite fiddly too - I recommend using two pizza stones/trays and alternate these. Also, it helps to shape all pizza bases ahead of the preliminary baking (then just keep them in the fridge on separate plates until youβre ready to bake).
Ingredients
- For the dough:
- 250g gluten free flour
- 2 tsp xanthan gum (if itβs not already in the flour blend)
- 2 tsp instant dry yeast
- 2 tsp brown sugar
- Β½ tsp salt
- 25 ml olive oil
- 175g warm water
- For the toppings:
- 4 Tbsp pizza sauce (approx.) mixed with 1 tsp Italian herbs or oregano
- Sliced veggies such as:olives, mushrooms, onion, fresh bell pepper, roasted pepper/aubergine, artichoke hearts, asparagus tips, tomatoes, courgette
- Grated vegan cheese (optional)
Instructions
- Mix the flour, gum, yeast, sugar and salt together in a large bowl then stir in the oil.
- Gradually add in the water knead the dough into a slightly sticky ball.
- Cover with a tea towel then put in a warm place for an hour or so to rise.
- Pre-heat the oven to 250C with the pizza tray in it.
- Divide the dough into 2 (for large pizzas), 3 (for medium pizzas) or 4 (for small pizzas) portions.
- Sprinkle some flour onto a large piece of baking paper. Put one of the portions onto the paper, then sprinkle a bit more flour on top.
- Use your hands to squash the dough down until itβs really thin and round, then squidge up the circumference to create a slightly thicker crust.
- Lift the pizza - on its baking paper - onto the preheated baking tray. Bake in the oven for about 3 minutes then slide it off the paper directly onto the tray. Cook for another 3 or 4 minutes until lightly golden. Take it out of the oven.
- Spread the pizza sauce on top, then arrange your chosen toppings evenly, and scatter some vegan cheese all over the top, if liked.
- Bake for about 6-7 minutes until the toppings are done and the crust is crispy brown.
- Repeat with the other pizzas.
- Serve with a crispy salad.
