Gnocchi & peas in spiced sweet potato sauce
Background
Ready-made gnocchi is widely available in supermarkets and useful to have in your pantry for quick and easy meals, particularly if you have some lovely precooked sauce in the fridge or freezer. This gnocchi & peas in spiced sweet potato sauce is made like that - the sauce was cooked days before, then warmed up with some added peas while the gnocchi was cooking in another pan.
Ingredients
- 1 red onion
- 2 cloves of garlic
- 1 celery stick
- 1 Tbsp olive oil
- 1 carrots
- 2 medium sweet potatoes
- 1 tsp dried oregano
- 1 Tbsp tomato purée
- 1 tsp chipotle paste
- 1 tin chopped tomatoes
- 250 ml vegetable stock ( approx.)
- 1 bay leaf
- 100g frozen peas
- 2 Tbsp chopped parsley or coriander
- 1 pack (250g) gnocchi (gluten-free, if required)
- 1 handful wild rocket leaves
Instructions
- Finely chop the onion, garlic, celery, carrot and red pepper. Peel, then dice the sweet potatoes.
- Heat the oil in a saucepan, then add the onion & celery and gently fry for 5 minutes, until soft. Add the rest of the chopped vegetables, put a lid on, and gently sauté for 5-8 minutes, stirring occasionally.
- Add the oregano, tomato purée & chipotle. Stir to coat, then add the tinned tomatoes and enough stock to cover well. Add the bay leaf, bring to the boil, then gently simmer for 20 minutes until the vegetables are soft. For the last 5 minutes of cooking, add half of the peas.
- Turn off the heat. Remove the bay leaf. Add the fresh herbs and, using a stick blender, purée the stew - you should get a thick, smooth sauce. You can transfer the sauce into a freezer box and chill, or continue with the recipe.
- Ad the remaining peas to the sauce and cook for 5 minutes.
- Meanwhile, following the packet instructions, cook the gnocchi in a pan of boiling water, then drain.
- Mix the gnocchi with the sauce and rocket leaves, then serve immediately.
