Goat’s cheese pasta with caramelised figs
Background
This goat’s cheese pasta with caramelised figs and onion is a lovely dish, which is not surprising, given that goat’s cheese and figs with honey and balsamic vinegar are a classic combo. I added some walnuts but pine nuts would work too or you can omit them. I served it with mint leaves but balsamic leaves would also go well with the dish. You can use gluten-free pasta for this recipe and plant-based cheese alternative too.
Ingredients
- 200g pasta of your choice
- 4 ripe figs
- 1 small red onion
- 2 Tbsps of balsamic vinegar
- 1 Tbsp of honey or date syrup
- A handful of walnuts, chopped
- 2 sprigs of thyme
- 50g soft goat’s cheese
Instructions
- Cook the pasta according to the packet instruction, then drain and keep warm in the pan.
- Meanwhile, cut the onion into thin slices. Remove the stem of the figs, then cut them into four wedges each.
- Heat some oil in a saucepan, then add the onion and thyme leaves and gently sauté until the onion has softened.
- Add the balsamic vinegar, figs and the honey, then gently stir until the onions and figs caramelise.
- Crumble most of the goat's cheese on top of the pasta, mix well, then divide between two plates. Top with the caramelised figs and onion, then crumble the remaining cheese over the dishes.
- Scatter some chopped walnuts on top and drizzle with some honey, then serve.
