Greek olive oil cookies

Background
Ladokouloura are traditional Greek cookies made with olive oil. The cookies can be coated in sesame seeds or chopped nuts are added to the dough (or both). Furthermore you can add some cognac or orange/almond liqueur to the dough. These Greek olive oil cookies are vegan and suitable for a dairy-free diet too.
Ingredients
- 500g flour (approx.)
- 1 tsp baking powder
- 1 tsp bicarbonate of soda
- 150g sugar
- 250 ml olive oil
- 250 ml fresh orange juice
- 3 Tbsp Cognac (optional)
- 1 tsp cinnamon
- 1 tsp vanilla extract
- ¼ tsp ground clove
- ½ cup finely chopped nuts of your choice (walnuts, pistachio, almond, macadamia etc)
- Sesame seeds for coating (optional)
Instructions
- Preheat your oven to 170°C (340 F).
- Zest then juice the orange.
- Combine the flour, baking powder, baking soda and set aside.
- In a another bowl, combine the olive oil, orange juice and zest, cinnamon, vanilla and cloves.
- Slowly add the flour mixture to the olive oil mixture, while stirring. Add the nuts and use your hands to combine. Your dough should be soft and sticky.
- Rest for 5 minutes, if it’s too wet, add more flour. It should be sticky and pliable.
- Make walnut sized balls from the dough. Put these on baking trays, lined with parchment paper.
- Poke your finger into the centre of the ball to create a hole and form them into a doughnut shape. Alternatively roll the balls into logs and push the ends of each log together to make circles.
- At this point you could dip them into sesame seeds to coat them, then place them onto a baking sheets lined with parchment paper (allowing enough space between them to rise).
- Bake for about 20-25 minutes until the cookies are a light brown colour. Halfway through baking swap the trays in the oven to ensure even baking.
- Transfer the cookies to a wire rack and let them cool completely.
