Green pea and dill fritters

Background
These green pea and dill fritters are gluten-free, dairy-free and low-carb. They are perfect for parties, picnics or snacking during the day. Serve them with dips or toppings of your choice, if preferred.
Ingredients
- 2 cup defrosted green peas
- 2 medium eggs
- 4 Tbsp chickpea flour
- 1 handful dill leaves
- 1 garlic clove, chopped
- 1 tsp baking powder
- 50 ml almond milk
- ½ tsp salt
- 1 tsp of olive oil plus for frying
- salt and pepper
Instructions
- Put all ingredients in a food processor and blitz until you get a thick batter.
- Rest if you can for 15 minutes.
- Grease a pancake pan and add 3-4 dollops of the batter, making circular shapes. When the surface of the fritters is no longer runny turn them over and cook for about 30 seconds, then transfer them to a plate.
- Repeat with the rest of the batter.
- Serve warm or at room temperature.
