Green pea and dill spread

Background
This green pea and dill spread can be used as a sandwich spread or on party nibbles. Alternatively serve it as a pasta sauce or mix it with leftover meat, fish, grilled veggies and use it for stuffing, pies and toppings. Itβs very easy to make, itβs vegan, low-carb, low-cal and gluten-free too!
Ingredients
- 1 cup frozen green peas
- 1 large or 2 small garlic clove
- 1 Tbsp balsamic vinegar
- 2 tsp olive oil
- Salt & pepper
- 2 Tbsp chopped dill (or more)
- Pine nuts (optional)
Instructions
- Put the peas in a pan of water. Bring to the boil and cook for 3-5 minutes.
- Drain, but keep a small cupful of the cooking water. Rinse the peas under cold water, then put them in a small food processor.
- Finely chop the garlic and dill, then add these to the peas.
- Add the balsamic vinegar and salt & pepper to your liking. Add some pine nuts, if liked - about a small handful.
- Whiz until you get a smooth paste. If itβs too thick, add some of the cooking water you put aside.
- Taste, and season to your liking.
- Cool until serving.
