Green vegetable salad with tofu

Background
You can make this green vegetable salad with tofu in just 10 minutes. Itβs healthy, vegan, yummy and can be served with rice, on a piece of toast, quinoa or as a side dish. You can use other green too, such kale, cavolo nero, broad beans, soy beans etc.
Ingredients
- 100g Tenderstem broccoli
- 100g asparagus or green beans
- 100g green peas
- 50g hard tofu, drained
- For the dressing:
- 1 clove of garlic (optional)
- 1 handful basil leaves
- 1 tbs Balsamic vinegar
- 1 tsp olive oil
- 1 tsp soya sauce
- Lemon juice
- Salt and pepper
Instructions
- Cut the ends off of all vegetables then put them in a steamer over boiling water. Steam them for about 5 minutes or until just tender. Transfer them to a bowl of icing cold water.
- Put the ingredients in a small food processor and whiz until you get a lightly textured dressing. Adjust the seasoning & vinegar, oil, lemon juice etc to your liking.
- Drain the vegetables and scatter them onto a platter.
- Pat-dry the tofu and cut it into little cubes. Scatter these on top of the vegetables.
- Pour over the dressing, toss gently and serve.
