Background

This vegan grilled courgette, avocado and chickpea salad is easy to make. You could serve it with a piece of sourdough or as a side dish with grilled meat or halloumi.

Ingredients

1 small courgette
1 red bell pepper
Olive oil
1 tin chickpeas
4-6 salad onions
½ avocado
For the dressing:
1 garlic clove, minced
1 Tbsp olive oil
1 lemon, juiced
½ tsp smoked paprika
1 tsp black cumin seeds
Salt& pepper

Instructions

Cut the courgette in half vertically, then slice both halves into 1cm pieces. Toss them with some olive oil and season with salt and pepper.
Cut the red pepper into slices and brush them with some oil.
Heat a griddle pan then grill the courgette and pepper until lightly charred.
Meanwhile, rinse and drain the chickpeas and put them in a bowl.
Whisk the minced garlic, oil, lemon juice, paprika and cumin seeds. Add this to the chickpeas. Season with salt and pepper to your liking.
Cut the avocado flesh into small cubes. Thinly slice the salad onions. Add these to the chickpeas and toss gently.
Add the grilled veggies to the salad and toss gently.
