Grilled courgette, avocado and chickpea salad

Background
This vegan grilled courgette, avocado and chickpea salad is easy to make. You could serve it with a piece of sourdough or as a side dish with grilled meat or halloumi.
Ingredients
- 1 small courgette
- 1 red bell pepper
- Olive oil
- 1 tin chickpeas
- 4-6 salad onions
- ½ avocado
- For the dressing:
- 1 garlic clove, minced
- 1 Tbsp olive oil
- 1 lemon, juiced
- ½ tsp smoked paprika
- 1 tsp black cumin seeds
- Salt& pepper
Instructions
- Cut the courgette in half vertically, then slice both halves into 1cm pieces. Toss them with some olive oil and season with salt and pepper.
- Cut the red pepper into slices and brush them with some oil.
- Heat a griddle pan then grill the courgette and pepper until lightly charred.
- Meanwhile, rinse and drain the chickpeas and put them in a bowl.
- Whisk the minced garlic, oil, lemon juice, paprika and cumin seeds. Add this to the chickpeas. Season with salt and pepper to your liking.
- Cut the avocado flesh into small cubes. Thinly slice the salad onions. Add these to the chickpeas and toss gently.
- Add the grilled veggies to the salad and toss gently.
