Halloumi, pea and spinach fritters

Background
These halloumi, pea and spinach fritters are perfect for picnics, lunch boxes or party snacks. Or you could serve them in a burger, flatbread or with a salad. Tzatziki, hummus or tahini sauce goes really well with it.
Ingredients
- 1 cup frozen peas, defrosted
- 100g spinach
- ½ block halloumi, coarsely grated
- 2 Tbsp parsley or mint finely chopped
- 1 garlic clove, minced
- 1 large egg, lightly beaten
- ½ cup plain flour
- Grated zest of1 /2 lemon
- ½ tsp paprika
- 1 pinch sea salt
- ½ tsp ground peppercorn
- Olive oil
Instructions
- Put the spinach in a bowl and add boiling water. When wilted, drain and rinse under cold water. Squeeze out any excess water, then chop it finely with a knife.
- Lightly mash the peas with a fork.
- Put the peas, spinach, grated halloumi, chopped parsley, beaten eggs, minced garlic, flour, lemon zest, paprika, ground pepper and salt in a bowl and mix well with your hand.
- Create 6 or 8 equal sized balls from the mixture and flatten them between your palms into patties.
- Heat some oil in a frying pan then fry the patties for 2-3 mins on each side until they are golden.
- Serve at room temperature.
