Halloumi with quinoa salad

Background
This healthy quinoa salad is combined with chickpeas, preserved lemon, tomatoes and pepper. It's served with griddled halloumi so it becomes a lovely and filling lunch. You can have some wholesome bread with it too if you like.
Ingredients
- 1 vegetable stock cube
- 100g quinoa
- 1 preserved lemon
- 1 green pepper
- 2 ripe tomatoes
- 1 tin of chickpeas (400g)
- 3 Tbsp chopped chives
- Squeezed juice of half a lemon
- olive oil
- 200g halloumi
Instructions
- Put the quinoa in a saucepan, pour boiling water over it to cover well. Add the stock cube, then cook for 15 minutes until soft. Drain and transfer into a serving dish .
- Meanwhile chop the lemon, tomatoes , peppers , chives, and drain the chickpeas. Add all this to the quinoa,together with the lemon juice and toss well.
- Drain the halloumi and wipe it clean with paper towel then slice into 1cm thick. Brush with oil then griddle or fry on both size for 1-2 minutes until golden. Serve with the salad.
