Harissa chickpea turnovers

Background
These vegan harissa chickpea turnovers can be served warm or cold. Also, the filling can be made well ahead and kept in the fridge until you're ready to bake. They are perfect for a quick meal with salad, or for parties, picnics, lunchboxes etc. If youβre vegan, make sure you use milk-free pastry! The recipe works with gluten-free pastry too.
Ingredients
- 1 Tbsp olive oil
- 1 onion
- 2 cloves of garlic
- 1 carrot
- 1 sweet potato, peeled
- Β½ red pepper
- 1 tsp ground cumin
- 1 tsp paprika
- 2 tsp harissa paste
- 1 tsp tomato purΓ©e
- 2 tomatoes, chopped
- 1 cup shredded kale or spinach
- Juice of Β½ lemon
- Salt and pepper
- 1 Tbsp chopped coriander or parsley
- 1 can of chickpeas, drained
- 1 ready-rolled vegan puff pastry ( gluten-free if needed)
Instructions
- Finely chop the onion and mince the garlic.
- Cut the carrot, red pepper and sweet potato into tiny cubes.
- Heat the oil in a pan and gently sautΓ© the onion for 5 minutes. Add the chopped vegetables and cook, over low heat and under cover for another 5 minutes.
- Add the spices, garlic, harissa & tomato paste. Stir for a few seconds, then add the chopped tomatoes and a little water. Cook for 10 minutes or until the vegetables have softened. Add more water if itβs getting too sticky. Now add your greens and the lemon juice. Sautee for 3-5 minutes, then stir through the chickpeas and chopped herbs. Season to taste with salt and pepper. Lightly mash the sweet potatoes with a fork, if three is too much liquid around the veggies. Set aside to cool. (This filling can be made ahead).
- Preheat the oven to 180Β°C. Line a baking sheet with parchment paper.
- Unroll the pastry and cut it into 6 equal squares. Spoon some of the filling into the middle of the squares. Fold them over and pinch the edges together with your fingers.
- Put them on the baking sheet and bake in the middle of the oven for 10-12 minutes until golden.
- Serve warm or at room temperature.
