Healthy Blueberry oat muffins

Made with wholemeal flour, oats, and juicy blueberries, these sugar-free blueberry muffins are light, moist and full of nutrients. Perfect for a quick healthy breakfast muffin on busy mornings, they’re also kid-friendly, dairy-free and freezer-friendly. Whether you bake them in the oven or make air fryer blueberry muffins, this easy recipe is perfect for a wholesome breakfast, guilt-free snack or lunchbox treat.
Ingredients
- 1 cup rolled oats
- 1 cup wholemeal flour
- 2 tsp baking powder
- 1 tsp Ceylon cinnamon powder
- 2 ripe bananas
- 2 medium eggs
- 1 tsp vanilla extract
- 1 cup oat milk
- 1 Tbsp vegetable oil
- ½ cup ground almonds or walnuts
- 1 cup fresh or frozen blueberries
Instructions
- Preheat the oven to 180°C (350°F) or prepare your air fryer.
- In a large bowl, combine oats, wholemeal flour, baking powder and cinnamon.
- In another bowl, mash the bananas with a fork. Add eggs, vanilla, oat milk and oil. Mix well.
- Fold in the ground almonds or walnuts, then gently stir in the blueberries.
- Spoon the mixture into 12 silicone muffin cases. Place them on a baking tray or directly in the air fryer basket.
- Bake for 20–25 minutes, until golden and firm to the touch.
- Cool in the cases for 5 minutes, then transfer to a wire rack to cool completely.
