Healthy breakfast apple crumble

Background
Porridge is the healthiest breakfast but it can become boring if we eat it every day. So sometimes I bake a “porridge” cake or make oat cookies instead. This time I experimented with apple crumble - I made it sugar free, fat-free, gluten-free and dairy-free. So this version is a super healthy breakfast apple crumble that can help you start the day with the right nutrients. You can use an Air fryer for this recipe, using a smaller baking dish. Set it to “bake” for 20 minutes.
Ingredients
- 1 large cooking apple
- ½ tsp Ceylon cinnamon
- ½ tsp ground ginger
- 1 tsp vanilla extract
- 2 or 3 Tbsp water or fresh apple juice
- ½ cup chopped walnuts
- 4 dates or prunes, chopped
- For the crumble:
- 1 large, ripe banana
- ¾ cup oats
- 2 Tbsp mixed seeds (pumpkin and sunflower)
- 1 Tbsp ground flaxseeds
- ½ tsp Ceylon cinnamon
- ½ tsp ground ginger
- 3 Tbsp oat milk, approx.
Instructions
- First, mix the crumble. Mash the bananas with a fork, then add the ground flaxseeds, spices and enough oat milk to have a thick, porridge-like consistency. Let it rest.
- Preheat the oven to 180°C.
- Peel and dice the apple, then scatter them into a baking dish. (If you like your apple crumble mushy - you can cook the apple pieces in a pan with a little water or apple juice for 5 minutes until softens. Then transfer the softened apples to the baking dish).
- Dust the apple with cinnamon and ginger and scatter the chopped walnuts and dates around the apple pieces.
- Drizzle with water/juice and the vanilla extract. (You don’t need water, if the apples are pre-cooked).
- Top with the oat crumble evenly.
- Bake in the oven for 25-30 minutes, until the crumble looks golden.
- Alternatively, bake it in an Air Fryer for 20 minutes.
- Let it cool a bit and serve with Greek yogurt, crème fraîche or plant-based alternatives.
