Background
This is a healthy version of the popular coleslaw. If you like onion then you can add some sliced red or spring onion. Use it in burgers, sandwiches or as a side salad with barbecued meat & fish.
Ingredients
- 200g white cabbage
- 2 carrots
- 1 Tbsp sesame seeds, toasted
- Dressing:
- 2 tsp Dijon mustard
- 2 Tbsp white wine vinegar
- 1 tsp honey
- 3 Tbsp fat-free Greek yogurt
Instructions
- Shred or thinly slice the cabbage. Peel and coarsely grate the carrots.
- Toss the cabbage and carrots together in a mixing bowl. Add the sesame seeds.
- Whisk together the dressing and pour it over the salad. Season to taste.
- Toss well.
