Hoisin meatballs with noodles
Background
During the Chinese New Year festivities I enjoy cooking Asian food. A popular dish I in my family is meatballs with spaghetti - so I created these Chinese-style Hoisin meatballs with noodles. The dish was really delicious and quite filling! The meatballs can be baked or steamed for a healthier option.
Ingredients
- For the meatballs:
- 450g pork mince
- 1 bunch spring onions, finely chopped
- 2 cloves of garlic, minced
- 2 Tbsp hoisin sauce
- 1 Tbsp soya sauce
- 2 eggs
- 1 Tbsp sesame seeds (optional)
- For the noodles:
- 250g egg or rice noodles
- 1 onion
- 2 cloves of garlic
- 1 inch piece of ginger
- ½ red bell pepper
- 100g sugar snaps or mangetout
- 1 Tbsp soy sauce
- 1 Tbsp Chinese rice wine
- 1 tsp sesame seeds
- 1 tsp hoisin sauce
- 1 tsp toasted sesame oil
- To cook: 2 Tbsp ground nut oil
- To serve (optional): toasted sesame seeds and chopped coriander, sliced red chilli
Instructions
- Combine all the ingredients for the meatballs. Shape small balls and put them on a plate/tray (chill until ready to cook). Scatter some sesame seeds over them, if you like.
- Heat 1 Tbsp groundnut oil in a wok. When smoking hot, add the balls and fry them, turning around regularly, until brown all over. Transfer them to a plate, lined with paper kitchen towel. Cover the plate with a large bowl to keep warm. (Alternatively bake them in a medium-hot oven.)
- Thinly slice the onion, garlic and ginger. Cut the bell pepper into strips.
- Cook the noodles according to the pack instructions. Drain and keep warm.
- Heat the remaining groundnut oil in a wok. When smoking hot, add the onion, garlic and ginger. Stir-fry for a minute, then add the bell pepper and sugar snaps. Stir-fry for a couple of minutes, then add the soy sauce, rice wine and sesame seeds. Stir-fry for another minute or so, then add the hoisin sauce and let the sauce reduce and become sticky. Add the cooked noodles and the toasted sesame oil and gently combine.
- Fold in the meatballs gently, to warm them up.
- Serve with sesame seeds and chopped coriander scattered on top and with sliced fresh chilli, if liked.
