Honey-mustard roasted parsnip
Background
This honey-mustard roasted parsnip is an easy and delicious side dish that fit in a roast dinner or Sunday lunch menu. I used acacia honey because it’s not too sweet but you can use any other type of runny honey.
Ingredients
- 2 large parsnips
- 1 Tbsp grainy mustard
- 1 tsp Dijon mustard
- 1 Tbsp olive oil
- 1 Tbsp Acacia honey
Instructions
- Preheat the oven to 180°C.
- Peel the parsnips then cut them into batons.
- Mix the oil and mustards together.
- Put the parsnips in a small roasting dish, then brush them with the mustard sauce.
- Bake for about 25 minutes, until tender.
- Drizzle with the honey and roast for another 5 minutes or so until the parsnip pieces are lightly caramelized and sticky.
- Serve warm.
