Indian beetroot with lentils

Background
This recipe is so delicious and mouth watering, and it is healthy too. I got this recipe from my mom and my daughter loves it too. This dish is a family favourite and I make it almost once a week.
Ingredients
- 2 medium (finely grated) Beets
- 1 onion (chopped)
- 3 garlic cloves (chopped)
- 1 green chilli (chopped)
- ½ cup split bengal gram or yellow lentils (yellow masoor dal)
- 1 tsp cumin seeds
- Salt as required
- 1tsp oil
- Water as required
Instructions
- Soak the lentils in water for 30 min.
- In the meantime chop and grate the vegetables.
- Heat oil in a vessel and add the cumin seeds and let them splutter
- Add the onion and fry it for 5 minutes.
- Add the green chilli and garlic cloves.
- Add the soaked and drained lentils to the fried onions.
- Add the grated beets, salt and add little water. Let them cook under a lid.
- Cook until al dente (and add more water if it is too dry).
- Serve hot with rice or roti.
Tips
- Care should be taken not to overcook the beets.
- The lentils also should not be over cooked.
