Background
Theses Jack Skellington jam cookies are super easy to make. I used vegan ready-rolled shortcrust pastry, but you can make your own cookie pastry, if preferred. Perfect last minute recipe for a Halloween party. (My cookies don't look pro because I was in a rush - next time I'll allow more time for decoration!)
Ingredients
- 1 sheet ready-rolled sweet shortcrust pastry or your own cookie pastry, rolled out
- Blueberry jam
- Chocolate or black décor pen
Instructions
- Preheat the oven to 180°C.
- Unroll the pastry on a large chopping board.
- Using a circle cookie cutter or a glass, stamp out rounds. Put them on a baking tray, lined with parchment paper.
- Using your fingers, press down into the pastry to create two eye shapes, but don’t push through the pastry.
- Using straws, make two small holes through the pastry to create the nostrils.
- Drop some jam into the eye area.
- Bake the cookies for 10-12 minutes, then let them cool in the tray.
- When they are cooled, use the chocolate décor pen to draw a long, curved smile near the bottom of the cookies, then draw small lines across it.
- Fill the holes of the nostrils with chocolate or jam - or leave them empty.
