Japanese beef & shiitake stir-fry

Background
his Japanese beef & shiitake stir-fry is ideal for busy days as it’s super quick and easy to make. Serve it with noodles or steamed rice. Instead of soy beans you can use green beans or green peas.
Ingredients
- 350g stir-fry beef strips
- 1 tsp Shichimi Togarashi ( 7 spice mix)
- 2 Tbsp rapeseed oil
- 2 Tbsp olive oil
- 100g shiitake mushrooms
- 100g soy or edamame beans
- 1 lime, juiced
- 2Tbsp Kikkoman soy sauce
- 1 Tbsp Mirin or rice wine
Instructions
- Heat half of the oil in a wok. When hot, add the beef and spice mix. Stir-fry for 2 to 3 minutes until golden brown. Remove the beef to a plate and set aside.
- Add in the remaining oil to the wok, then mushrooms and beans. Cook for a couple of minutes, then add the soy sauce and lime juice. Cover and cook for 2 more minutes.
- Return the beef and add the mirin or rice wine. Let it bubble for 2-3 minutes, then serve.
