Japanese-style runner bean salad

Background
This Japanese-style runner bean salad is very easy and tasty, the perfect side dish with sushi or for your bento box. It tastes much better if you let it marinate for a couple of hours.
Ingredients
- 150g sliced runner beans
- 4 salad onions
- 4 radishes
- 2 tsp sesame seeds
- To serve: soft tofu (optional)
- For the dressing:
- 1.5 Tbsp soya sauce
- 2 tsp rice vinegar
- 1 tsp Miso paste
- Pinch of sugar or a little honey
- 1 tsp sesame oil
Instructions
- Steam or blanch the runner beans for 3-5 minutes, until tender, then drain.
- Meanwhile, mix the dressing in a small bowl.
- Slice the radishes and salad onions.
- Put the beans in a bowl, add the radish and spring onion pieces, then pour over the dressing.
- Combine gently and let it rest for a minimum of 10 minutes, before serving.
- Crumble some tofu on the top if you like, just before serving.
