Kara boondi
Background
Kara boondi is a quick and easy anytime snack. This is a spicy fried snack made from chickpea flour. You need a special ladle for making boondi which is easily available in India. A mixture consisting of boondi, peanuts, curry leaves and a few spices makes a great evening snack item. This is one of the fried snacks that is made during Diwali in south India.
Ingredients
- 2 cups chickpea flour
- 2 Tbsp rice flour
- 1 pinch asafetida
- 1 pinch baking soda
- 1 tsp turmeric powder
- Salt to taste
- Oil for deep frying
- ½ cup peanuts
- 1 sprig curry leaves
- 1 tsp red chilli powder
Instructions
- In a mixing bowl add chickpea flour, rice flour, salt, turmeric powder, asafetida, baking soda.
- Mix with a spoon and add water little by little till the consistency is slightly thin.
- Using a whisk make a smooth batter.
- Heat oil in a deep bottomed pan. Take a dry perforated ladle and place it above the hot oil and add some batter with a spoon on the perforated ladle.
- Spread the batter lightly with a spoon and allow the droplets fall in the oil.
- On a medium flame begin to fry the boondi.
- When the boondi has become crisp and golden, turn them with a slotted spoon.
- Remove with a strainer spoon draining the extra oil. Place them on kitchen paper towels. Repeat the process till the batter is done.
- In another small pan, take 3 table spoons of oil.
- Add peanuts and fry till brown. Add curry leaves once the peanuts are fried.
- In a plate add fried boondi, peanuts, curry leaves and red chilli powder and mix well.
- Store the boondi in an air tight container.
- Serve as tea time snack.
