Background
Kobbari boorelu is a traditional south Indian sweet prepared during festivals in the coastal Andhra region of India. This dish is delicious and also is very easy to make.
Ingredients
- 500 gms uncooked rice
- 500 gms grated jaggery
- 1 cup fresh grated coconut
- Β½ tsp cardamom powder
- Oil for deep fry
Instructions
- Soak rice in water for 6 hours. Drain the water and lay it on a clean cloth to remove the remaining water.
- Grind the rice into soft powder and keep it aside.
- Take heavy bottomed vessel, add ΒΌ cup of water and the grated jaggery. Let it melt on a low flame and keep stirring continuously till thick consistency.
- Add grated coconut and cardamom powder. Cook for 5 minutes.
- Remove from the flame and add rice flour little by little to make soft dough.
- Heat oil in a deep bottomed pan.
- Take lemon sized dough, press gently on a greesed plastic sheet to make circular shape.
- Drop gently in the oil and fry on a medium flame on both sides till turns brown.
- Repeat the process till the dough is done. You can fry 5-6 at a time in batches.
- Let them cool and store them in air tight container.
