Lamb chops in puttanesca sauce
Background
Anchovy & lamb is a classic combo so no wonder this dish is super yummy! These lamb chops in puttanesca sauce are ready to serve in just 20 minutes. You can use home-made puttanesca sauce or shop-bought version. ( If you want a delicious, home-madeΒ version, follow my recipe Spaghetti alla puttanesca to make the sauce). Serve it with mashed potatoes or rice.
Ingredients
- 4 lamb chops
- 2 Tbsp olive oil
- 1 red onion
- Β½ red or yellow pepper
- 2 cloves of garlic
- 1 tin or jar puttanesca sauce (approx.)
- 1 handful cherry tomatoes
- Β½ cup black olives
- Salt & pepper
- Pinches of chilli flakes, optional
- 2 Tbsp Chopped fresh herbs, to serve (parsley, coriander or mint)
Instructions
- Season the lamb.
- Thinly slice the onion, garlic and pepper.
- Heat half of the oil in a medium frying pan and seal the lamb on both sides, then transfer them to a plate.
- Pour away the fat, then add the remaining oil to the pan, then gently sautΓ© the onion for 3 minutes. Add the garlic, pepper, chilli flakes (if used) and cherry tomatoes. Saute for another 5 minutes or so.
- Add the puttanesca sauce, cover and cook for 5 minutes, then add the lamb and cook for another 5 minutes. (If the sauce seems too thick add a drop of water or some passata.)
- Finally, add the olives, some fresh herbs and serve.
