Lamb pilaf with apricots

Background
This is a simple, tasty weekday meal and it's ready in under 30 minutes. It's not too spicy so children can haveΒ it too! Serve it with a side salad.
Ingredients
- 400g lamb (boneless)
- 1 onion, chopped
- 2 cloves of garlic, finely chopped
- 1 Tbsp curry powder (mild)
- 200g of basmati rice
- 400 ml chicken stock
- 200g chopped tomatoes
- 8 pieces of dried apricots, chopped
- 2 Tbsp chopped parsley
- 1 Tbsp chopped mint leaves
- 1 Tbsp toasted pine nuts
- 1 Tbsp oil
Instructions
- Cut the lamb into bite-sized chunks.
- In a heavy-bottomed saucepan, heat the oil. Fry the onion until soft, then add the garlic.
- Add the meat and curry powder and stir for about 1 minute.
- Add the rice and, after 1 minute of stirring, add the tomato and stock. Bring to the boil then add the apricots.
- Gently simmer under cover for about 20 minutes until the rice is tender. Add more stock if needed,
- Stir in the pine nuts and herbs, season to taste.
- Serve warm.
Tips
Make it more spicy by using hot curry powder or add some chilli powder.© 2024 Copyright CookTogether
