Lemon and basil BBQ chicken thighs

Background
These lemon and basil BBQ chicken thighs are perfect for a Summer garden party. You can marinate the chicken well ahead or even the day before. If the chicken pieces are too thick, it’s advisable to pre-bake them to ensure that they get cooked properly on the BBQ without getting burnt. Serve them with salad and grilled veggies.
Ingredients
- 4 chicken thighs
- 1 large clove of garlic, minced
- Zest and juice of ½ lemon
- Salt and pepper
- 1 handful of basil leaves, chopped
- 1 Tbsp Olive oil
Instructions
- Mix the garlic, lemon zest, lemon juice, olive oil and most of the chopped basil leaves and pour the mixture into a freezer bag. Add the chicken pieces, then massage them well through the bag, then rest in the fridge until you’re ready to cook them.
- If you want to prebake them, put them in a baking dish (with the marinade), cover with foil and bake in the middle of a preheated oven set to about 160C for 20 minutes. Take the tray out of the oven and keep the jus.
- Put the chicken on a BBQ and cook until it lightly charred. Make sure it’s cooked through properly!
- Serve with the jus.
